Cacao from the Awajun Communities of Utt, Temashnum, Sukutin and Nuevo Salem, Amazonas Region, Peru.
Cacao harvest: 2019.
Chocolate made from cacao from the Awajun native community, originally from the Peruvian Amazon. Criollo variety cacao, fermented for 4 days in the village of Utt in wooden crates, covered with banana leaves and then dried in the same village.
At the Casa Cacao workshop, we select the cacao by hand, we roast it, crack and winnow the beans and we let them marinate in liquorice and tangerine juice for a month. Then, we dry them, mix them with organic sugar and conche the mixture for a minimum of 48 hours to get a unique chocolate.
